3 cups cherry tomatoes, quartered
¾ cup finely chopped unpeeled cucumber
½ cup finely chopped red onion
3 tablespoons snipped fresh cilantro
2 tablespoons lime juice
2 teaspoons finely chopped serrano chile peppers seeded if desired
1 teaspoon extra-virgin olive oil
½ teaspoon kosher salt
In a medium bowl combine all ingredients. If desired, season to taste with additional lime juice and salt.
